Chocolate Mayonnaise Cake

Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder

  • 1 cup mayonnaise (full-fat recommended)
  • 1 cup water
  • 2 tsp vanilla extract

  • 2 cups powdered sugar
  • 1/4 cup milk (plus more if needed)
  • 1 tsp vanilla extract

Directions

Step 1: Make the Cake

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. Add the mayonnaise, water, and vanilla extract. Mix until smooth and well combined.
  4. Pour the batter into the prepared pan and smooth the top.
  5. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the cake cool completely before frosting.

Step 2: Make the Frosting (Optional)

  1. In a bowl, beat the softened butter and cocoa powder until creamy.
  2. Gradually mix in powdered sugar, alternating with milk, until you reach a smooth, spreadable consistency.
  3. Add vanilla and beat until fluffy. Spread over cooled cake.
