Ingredients
For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tbsp unsalted butter, melted
For the Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 tbsp cornstarch
- ½ cup sour cream

- ½ cup crushed pineapple (drained)
- ¼ cup orange juice concentrate (thawed)
- 1 tbsp sugar
- 1 tsp cornstarch
Directions
Step 1: Prep the Crust
- Preheat oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press into the bottom of a 9-inch springform pan. Bake for 8 minutes. Let cool.
Step 2: Make the Swirl
- In a small saucepan, combine crushed pineapple, orange juice concentrate, sugar, and cornstarch.
- Cook over medium heat until thickened (3–5 minutes). Let cool.
Step 3: Prepare the Cheesecake Filling
- In a large bowl, beat the cream cheese until smooth.
- Add sugar, then mix in eggs one at a time.
- Blend in vanilla, cornstarch, and sour cream until creamy.
Step 4: Assemble
- Pour half of the cheesecake batter into the crust.
- Spoon half the fruit swirl over the top and gently swirl with a knife.
- Repeat with remaining cheesecake batter and fruit swirl. Swirl again.
Step 5: Bake
- Place pan in a water bath (wrap bottom in foil to prevent leaking).
- Bake for 55–65 minutes, or until center is just set.
- Turn oven off and let cheesecake sit inside with door cracked for 1 hour.

- Remove from oven and refrigerate at least 4 hours or overnight before serving.
