- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup powdered sugar
- 1/2 tsp almond extract
- 1/2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/4 tsp salt
- 3/4 cup chopped maraschino cherries (drained and patted dry)
- Optional: 1/2 cup mini chocolate chips or white chocolate chips
Directions
Step 1: Prep the Oven
- Preheat oven to 325°F (165°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Make the Dough
- In a large bowl, cream together butter and powdered sugar until light and fluffy.
- Mix in almond and vanilla extract.
- Add flour and salt, mixing just until combined.
- Fold in the chopped maraschino cherries (and chocolate chips if using).
Step 3: Shape & Bake
- Scoop tablespoon-sized portions of dough and roll into balls.
- Place on baking sheet about 2 inches apart.
- Slightly flatten each ball with your fingers or the bottom of a glass.
- Bake for 12–15 minutes, or until edges are just lightly golden.
Step 4: Cool
- Let cookies cool on the baking sheet for 5 minutes.
- Transfer to a wire rack to cool completely.
