Fluffy, buttery, and soft biscuits made with just a few ingredients, including 7-Up soda for an extra light texture. Perfect for any meal or snack!
Ingredients:
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cubed
- 1 cup 7-Up (or any lemon-lime soda)
- 1/4 cup melted butter (for brushing on top)
Directions:
- Preheat oven:
Preheat your oven to 450°F (230°C). Lightly grease a baking sheet or line with parchment paper. - Mix dry ingredients:
In a large mixing bowl, whisk together the flour, baking powder, and salt. - Cut in butter:
Add the cold cubed butter into the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs. You want small pea-sized chunks of butter. - Add the 7-Up:
Pour in the 7-Up and stir until just combined. Be careful not to overmix. - Form the biscuits:
Turn the dough out onto a floured surface and gently fold it a few times to bring it together. Pat it into a 1-inch thick rectangle. Use a biscuit cutter or a glass to cut out biscuits. You should get about 8-10 biscuits. - Bake:
Place the biscuits onto the prepared baking sheet and bake for 12-15 minutes, or until they’re golden brown. - Brush with butter:
Once out of the oven, brush the tops of the biscuits with melted butter for extra flavor and shine.
