Citrus Bliss Lemon Meringue Cannolis

A delightful twist on the classic cannoli, filled with a tangy lemon cream and topped with light, fluffy meringue! A refreshing, zesty dessert that’s sure to impress.


Ingredients:

  • For the Cannoli Shells:
    • 12 store-bought or homemade cannoli shells (or make your own if you prefer)
  • For the Lemon Filling:
    • 1/2 cup heavy cream
    • 1/2 cup powdered sugar
    • 8 oz cream cheese, softened
    • 1/4 cup lemon curd (store-bought or homemade)
    • 1 tsp lemon zest
    • 1 tsp vanilla extract
  • For the Meringue Topping:
    • 2 large egg whites
    • 1/4 tsp cream of tartar
    • 1/2 cup granulated sugar
  • For Garnish:
    • Extra lemon zest (for topping)
    • Crushed graham crackers or chopped pistachios (optional)

Directions:

  1. Prepare the Lemon Filling:
    • In a medium bowl, combine the heavy cream and powdered sugar. Whip until stiff peaks form.
    • In a separate bowl, beat the cream cheese until smooth, then mix in the lemon curd, lemon zest, and vanilla extract.
    • Gently fold the whipped cream into the lemon mixture until smooth and fluffy. Set aside.
  2. Make the Meringue:
    • In a clean mixing bowl, beat the egg whites and cream of tartar on medium-high speed until soft peaks form.
    • Gradually add the granulated sugar, one tablespoon at a time, continuing to beat until stiff peaks form and the meringue is glossy and smooth.
  3. Assemble the Cannolis:
    • Carefully fill a piping bag with the lemon filling mixture. Pipe the filling into the cannoli shells, filling them generously but not overstuffing.
    • Once the cannoli shells are filled, pipe the meringue on top of each filled cannoli, creating a nice swirl or mound.
  4. Toast the Meringue:
    • Using a kitchen torch, carefully toast the meringue until it’s golden and crispy. If you don’t have a torch, you can place the cannolis under a broiler for about 1-2 minutes (keep a close eye to avoid burning).
  5. Garnish and Serve:
    • Once toasted, garnish with a sprinkle of fresh lemon zest and optional crushed graham crackers or pistachios for an extra crunch.
    • Serve immediately and enjoy the citrusy bliss!
