RICOTTA STUFFED SHELLS

  • 2 cups marinara sauce (homemade or store-bought)

Instructions:

  1. Cook the Pasta Shells:
    • Bring a large pot of salted water to a boil. Cook the jumbo pasta shells according to the package instructions until they are al dente. Be sure not to overcook them, as they will continue cooking in the oven. Drain and rinse them under cold water to cool.
  2. Prepare the Filling:
    • In a large bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, 1/4 cup of grated Parmesan cheese, the egg, chopped parsley, salt, and black pepper. Mix well to form the stuffing mixture.
  3. Stuff the Shells:
    • Preheat your oven to 350°F (175°C).
    • Using a spoon, carefully stuff each cooked shell with the ricotta cheese mixture. Place the stuffed shells in a baking dish, seam side down.
  4. Add the Marinara Sauce:
    • Pour the marinara sauce over the stuffed shells, making sure they are evenly covered.
  5. Bake:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes, or until the shells are heated through.
  6. Top with Cheese:
    • Remove the foil and sprinkle the remaining 1/2 cup of mozzarella cheese and 1/4 cup of grated Parmesan cheese over the top of the shells.
  7. Finish Baking:
    • Return the baking dish to the oven, uncovered, and bake for an additional 10-15 minutes or until the cheese is melted and bubbly, and the edges of the shells are lightly browned.
  8. Serve:
    • Let the stuffed shells cool for a few minutes before serving. Garnish with additional chopped parsley if desired. Serve hot and enjoy your delicious Ricotta Stuffed Shells!
