Parmesan Garlic Roasted Potatoes

Here’s how to make Parmesan Garlic Roasted Potatoes:

Ingredients:

  • 3 pounds red potatoes, halved
  • 2 tablespoons olive oil
  • 5 cloves minced garlic
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/3 cup grated Parmesan cheese
  • Kosher salt and freshly ground black pepper, to taste
  • 2 teaspoons unsalted butter
  • 2 teaspoons chopped parsley leaves

Instructions:

  1. Preheat your oven to 400 degrees F (200 degrees C). Prepare a baking sheet by spraying it with non-stick spray or greasing it with a layer of oil.
  2. In a large bowl, toss the halved red potatoes with olive oil, minced garlic, dried thyme, dried oregano, dried basil, and grated Parmesan cheese. Season with salt and pepper to taste. Mix everything together until the potatoes are evenly coated with the seasoning mixture.
  3. Arrange the seasoned potatoes on the prepared baking sheet in a single layer, with the peel side facing up.
  4. Roast the potatoes in the preheated oven for 25-30 minutes, flipping them halfway through the cooking time to ensure they become golden brown on all sides and are cooked through.
  1. While the potatoes are roasting, melt the unsalted butter either on the stove or in the microwave for about 1 minute.
  2. Once the potatoes are done roasting, remove them from the oven and transfer them to a serving dish. Drizzle the melted butter over the roasted potatoes and sprinkle chopped parsley leaves on top for garnish.
