Mexican Tortilla Casserole

Here’s the recipe for Mexican Tortilla Casserole:

Ingredients:

  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1 packet taco seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 can refried beans (warmed for easier spreading)
  • 1 cup prepared rice (e.g., Minute Rice)
  • 1/2 can Mexican blend corn, drained
  • 4-5 large flour tortillas
  • 8 oz thick chunky salsa (mild or hot, your choice)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a springform pan, round cake pan, or casserole dish with cooking spray.
  2. In a skillet, brown the ground beef and diced onion over medium heat. Drain excess fat.
  3. Add the taco seasoning mix to the skillet with the beef and onions, following the directions on the package.
  4. Lay one tortilla in the bottom of the prepared baking dish. Spread 1/3 of the refried beans over the tortilla, followed by 1/3 of the cooked seasoned ground beef mixture, and sprinkle with some shredded cheese.
  5. For the second layer, add another tortilla, followed by half of the prepared rice, half of the salsa, half of the drained corn, and more shredded cheese.
  6. Repeat the layers with another tortilla, 1/3 of the refried beans, 1/3 of the ground beef mixture, and cheese.
  1. For the final layer, add the last tortilla, remaining refried beans, remaining ground beef mixture, drained corn, rice, salsa, and top with shredded cheese.
  2. Cover the casserole with foil and bake in the preheated oven for about 40 minutes. Then, uncover and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  3. Let the casserole sit for 5 minutes before cutting into it. Serve topped with sour cream, diced onion, and shredded lettuce, if desired.
