WALKING TACO CASSEROLE

Ingredients:

  • 1.5 pounds ground beef
  • 3/4 cup chopped onion
  • 3 ounces cream cheese
  • 1 packet taco seasoning
  • 1 can green chilies
  • 1/2 to 2 cups Fritos corn chips
  • 1/2 cup shredded taco cheese blend
  • 1 Roma tomato, diced
  • 1-2 cups shredded lettuce
  • Toppings: sour cream and salsa

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, brown the ground beef and onion over medium-high heat until the beef is fully cooked and the onions are softened.
  3. Add the green chilies, taco seasoning, and cream cheese to the skillet. Cook, stirring occasionally, until the cream cheese melts and is well mixed with the beef mixture.
  4. Transfer the beef mixture to an oven-safe baking dish.
  5. Sprinkle the Fritos corn chips evenly over the beef mixture in the baking dish.
  6. Top with shredded taco cheese blend.
